VoIP will work over satellite connections and it is being used over satellite connections today. The biggest factor is typically the latency (delay). Most people can tolerate a delay of a few hundred milliseconds or more, which is common over satellite links. If you don't mind that, you should be ok to run VoIP over your satellite connection.
