At TechRepublic's website, you can find a sample PDA support policy and a wireless policy template that address administration and use of wireless handhelds, including BlackBerries. These and other policy hints were mentioned in my recent SearchMobileComputing.com WLAN Advisor column on creating wireless security policies. You may also want to check out SearchMobileComputing.com webcasts that have touched on this topic, including "Wireless handheld platforms and devices - 5 key considerations" (by Good Technology), "Managed security: Best practices for wireless and mobile security" (by iAnywhere), "How to ensure your wireless deployment is secure" (by RIM/BlackBerry). Finally, if you haven't already seen it, check out BlackBerry's security white paper.
