This white paper contains a bibliography of all the applicable standards and explains what's needed before deployment. If you really want an interesting spin on VoIP, I would suggest that you include the new wireless products and address saturation in the spectrums. The latest technologies that are getting a lot of press are SIP (especially from an interoperability standpoint due to different interpretations of the standards) and DEC. The >IETF is working on various topics to address security and closing some of the openness in the standards to assure interoperability. Hope this helps!
